Oklahoma requires that a food handler and a person in charge, an owner, manager or employee of a food establishment (i.e., restaurants, markets, bakeries, bars, food trucks, commissaries, and food facilities that prepare, handle, or serve non-prepackaged potentially hazardous food) demonstrate knowledge of food safety as outlined in the FDA Food Code by successfully passing an approved food safety training course, and if needed, become a certified food manager, take an accredited ANSI-CFP 8-hour food safety certification course, and pass an examination.
Food Handlers are required to take a short 2 hour training course and pass an exam. To become a Certified Food Manager, taking an approved Certified Food Protection Manager (CFPM) Training Course and passing an exam is necessary. Food Service Operator Certification is required in the municipalities of Oklahoma City, Edmond, Midwest City, Warr Acres, Spencer, The Village, Nichols Hills, Harrah and Del City. This Certification is a manager’s level certification. Each food service establishment is required to have at least one certified Food Service Operator. This certification involves 14 hours of class work and successfully passing an examination. The person obtaining this certification must be employed at the establishment and be in a position to supervise and train employees.

Food Handler Training of all employees is not required in Oklahoma County or the municipalities contained within Oklahoma County. Currently only Food Manager Training is required. If a facility or organization is interested in basic ANSI Certified Food Handler, the Oklahoma City – County Health Department can conduct a basic training for a group. Oklahoma Food protection training consists of two levels:
Level One Training
The new level of training, Level One Certification in Food Protection, is a mandated training for the person in charge per shift of a risk level I, II, III, and IV food service operation or retail food establishment in the following instances:
When a new food service operation or a new retail food establishment is licensed after March 1, 2010 unless the individual has successfully completed an equivalent or more comprehensive certification in food protection course.
When a food service operation or retail food establishment has been implicated in a foodborne disease outbreak.
When the licensor has documented a failure to maintain sanitary conditions as per section 3717.29 of the Revised Code for a retail food establishment or section 3717.49 of the Revised Code for a food service operation.
Level Two Training
The level two certification in food protection, which has been the certification program since 1973, is a more extensive training for the food manager and meets the requirement for demonstration of knowledge in rule 3717-1-02.4 (B) of the Administrative Code.
Course Description
Most people working in restaurants, on a mobile food truck, caterers, and non-restaurant facilities need food safety training or a food handlers card. To get that card, food handling and serving personnel should complete food handling training. After completing the course, they have to present the food handlers certificate to their local authority and pay the required registration fees.
Food Handler Training is often intended for entry-level professionals in the food service industry, such as servers, chefs, cooks, cashiers, food truck workers, mobile food vendors, caterers, and even convenient store (c-store) clerks. The Food Handler Certificate will require the learner to complete a brief 2-hour training course covering basic food safety principles. At the conclusion of the course, the learner will be tested on their knowledge of the content and learning outcomes. Upon successfully passing the exam, the learner will be issued a Food Handler’s Certificate document (or card).
